Serenity Now, Serenity Now!

I'll never forget the first time I came into contact with doTERRA oils. My friends mother-in-law is a massage therapist and I had her work on me before, she's amazing. Knocked out a migraine with some crazy ear trick. Anyway my friend, we'll call her L, always smelled awesome but in a natural hippy way. I loved it. Come to find out her mother-in-law sells doTERRA and she wears the oils.
Well one day I was at our place of worship and I... was... having... a... meltdown! I got there late, sat in the back and was alone with the kids (then it was just the March Hare who was like 9 and the Doormouse who was like 2). Well then the Doormouse had an accident... she was still in diapers but "it" leaked out.... EVERYWHERE!

Yes poo juice was everywhere, on her dress, tights, my skirt AND the seat! I was humiliated. I had the March Hare run to the bathroom to get wet paper towels so I could at least clean off the cloth seats!

Thank goodness the program had just ended. My friends sitting beside me were helping as much as they could, but could tell I was just a mess. Just then L walked up and asked why I looked like a crazy person. I told her what just happened and she runs back to her seat. She brings this little pouch and tells me to put some on, that it will help me calm down. She hands me Serenity by doTERRA, I put some on my neck as instructed. She tells me to fan it toward my face... So here I am covered in poo, waving my hands towards my face and chanting "Serenity Now, Serenity Now!"

Mommy's must have these 10 things in their cars....

Today is the third day this week I have been unable to convince myself to wake up earlier enough to shower and put a full face of make up on. Then it dawned on me I have everything I need in my car (aka the bus, aka Kat the cool mom SUV) to make it look like I functionally got out of bed, got dressed, put make up on, brought the kids to school and carried on with my day responsibly. Here I am this morning after applying the following must have's while in my car....

1. Wipes Make-up remover
I have actually just used my babies wipes but they do sell such a thing as make-up remover wipes. I have these wonderful cucumber smelling ones that leave my face feeling refreshed and moisturizing. And you would never know I haven't showered in three days! (P.S. I'd like to know a mother of three that showers everyday...)

2. Eye Shadow
Have a neutral colored eye shadow combo, like white, nude, tan and grey with an applicator. Something that will match everything.

3. Black Eye Liner
I buy two of my favorite eye liner, one for the car and one for the house. I like liquid which isn't always easy to apply at a red light but gives a much more precise line. Don't be cheap buy two!

4. Mascara
This is a no brainier. I have like 5 of my favorite mascara... just in case. One in the car, the bathroom, my purse, my hubbies truck and in the night stand. (you never know when you'll need it!)

5. Lip tint
Don't get me wrong I love me some dark blood red lipstick but when you have done your face in a barely there make up look that's not exactly the lip color you want to slap on, so having a tinted lip balm of some sort helps to round out the look. As far as make-up goes though, that's it, just the basic's. With three kids I've given up on much more than that and I'm trying to let my skin have a breather and age gracefully. (Ugh those word coming off my figure tips make me want to gag, but I'm already sick of covering up the inevitable... wrinkles, laugh lines and age spots).



6. Hairbrush
Even though I have short hair it still needs to be brushed once in a while, so I make sure I have a small brush in my car, which lead me to my next point.

7. Bobby pins and/or Rubber bands
I have both. With short hair I can only use bobby pins. But since I'm Italian and my hair gets greasey in like an hour I have to pin it back for it to look the slightest bit professional, otherwise you'll see me in a baseball cap. My girls on the other hand have long hair that always looks like they just emerged from an ally somewhere. So on those days where we are literately racing to beat the school bell (which is most days) I brush their hair and throw it in a pony when we get to school or where ever we're going.

8. Hairspray
I go to Target, buy one of the travel size hair sprays and throw it in my center console. When I need it, it's there.

9. Deodorant
Again I go to Target buy the travel size. I can not tell you how many times I have ran out of the house first thing in the morning and forgot to put this on. Having it in the car solves my forgetful mom brain, that is once I am completely awake and realize how God awful I smell.

10. Lastly... body spray. As we already know I stink and need something that smells good to cover up my I ran out of the house after making 5 lunches, getting 3 kids dress and dressing myself semi presentable (do yogo pants count?), non-showered, half awake stench.

My attempt at cake pops... more like balls!

The other day, my sons school had a science fair and I signed up to make goodies for the bake sale. Why??? I'm not entirely sure because baking is not one of my strong points, but I wanted to contribute. Of course I was the farthest thing from being a good prepared mom. I procrastinated until suddenly the fair was but hours away. Panic set in because I really had nothing planned. I run around the kitchen like a chicken with my head cut off trying to figure out what I had and what I could make with it!

I found a package of white cake mix, chocolate cake mix and exactly 6 eggs; I think to myself "I can do something with this!" I frantically rip apart every cabinet in my kitchen looking for cupcake wrappers to no avail. As for frosting I figured I'd look up how to make it on Pinterest but was running short on time and patience. So thinking fast I thought cake pops!

I Pinterested (is that a word?) cake pops and got the basics of how they are made. Well again I had no frosting, which just so happens to be a key part to the formation. So I frantically searched my cabinets until I found pudding, sprinkles and powdered sugar...  I can make something work with this... right?

So here goes nothing!!! I figured if they turned out horrible I'd just grab something at the store but really how could I go wrong with cake and pudding?!?! Get the print easy recipe here, otherwise here's the long version of the directions:

First you bake the cake according to the package. While that's baking, prepare the pudding according to it's package. Refrigerate the pudding. When the cake is done, pull it out and take it out of the pan to cool. Once it's cooled enough (I recommend letting it cool completely so it doesn't burn your hands, not that it happened to me or anything!) you crumble it all up, like below.


After you have cake crumbles add the pudding and mush it with you hands. It should have the consistency of mashed potato. As I found out with my chocolate batch if you add too much pudding you get mushy blobs instead of nice round firm balls. 


Before you start mushing though be sure to have your powdered sugar ready. I added the sprinkles to it so it was a one roll job. Back to the mushy cake... start rolling pieces into about 1 inch balls with your hands, then roll them in the powder sugar mixture and place them on a baking sheet lined with wax paper. After they are all rolled, place the sheet in the refrigerator so the balls firm up a bit and there you have it. I got about 36 balls with this recipe and the kids love them.


In fact my son said even though the chocolate ones ended up being mushy blobs he liked them best! My daughters and I loved the white cake ones aka the green balls!

I wrapped 3 balls together in plastic wrap, threw a card with my branding on them and off to the science fair we went without a minute to spare. Seriously though, for whipping these up on a whim and in only 2 1/2 hours I think they came out pretty darn good. Even if the chocolate ones did look like poo covered in rainbow sprinkles! Obviously I'm not one of those mom's that has time to teach you how to make perfect fondant cover cake pops but if you need an easy, tasty alternative, here you are!

DIY Hanging Herb Garden

I've wanted a herb garden for a while, but just as I was going to start one we moved and then we moved again. So now that we are settled again I was determined to get it started.
After many pins on pinterest I decided just what I wanted.  See for the house prior we had a wall length sliding glass door, so I had bought a nice long cappuccino colored curtain rod and simple matching sconces to hang it. So of course I wanted to find a way to use the set in our new place, but the only windows we have that are the length of the wall are over my kitchen sink and I didn't really want curtains there.
However these windows get great morning sun, really they are well lit all day so I thought, how fun it would be if I hung my herbs here! I found plant terrariums on Amazon and bought waxed thread in the same cappuccino color.
I bought a few pre-planted herbs in good health, but small enough to get into the terrariums. But I also started a few from seed (and they are already sprouting! ) I water them by just spraying them with a squirt bottle every other day. It's really neat to see the roots growing.
This project was super easy and just brings so much life to my kitchen (literally! ) I must admit I did have my hubby hang the bar, just because he's sooooooo much better at it than me. ;)

I gave up coffee!



Crazy I know! It's been exactly ONE month since I have had single cup of coffee! Here I am a self proclaimed coffee addict and I just gave it up. Well actually, dare I say, I found something better! Like ten times better.

Reader - "What?!?!?!" "Okay now we know you're crazy lady."

Alice - "Aaaaaaand it's natural and it's not caulked full of harmful nasty ingredients!"

Reader - "Lock her up, she's gone mad!"

Alice - "No, no really I haven't it's a tea."

Reader - "Go on..."

Ha ha sorry I don't know where the odd little conversation moment came from, I'm weird like that. Anyway yes it's a tea but the results are amazing. We drink coffee for the caffeine, right and energy we get from it...

But by 2-3 in the afternoon you hit that awful, I'm exhausted please just give me a bed, slump. Not to mention if you drink to much with out eating or like me just drink too much your super wired for all of five minutes, then you kind of feel sick and then comes the jittery twitch where you look like a crack addict coming down off a high.

In other words the effect doesn't last and drinking coffee all day just makes you sick.  Or if you suffer from migraines like I do, I can actually trigger a headache! In fact, I had an older friend who was a migraine sufferer as well, tell me to cut out coffee and see how I felt. So that was looming in the back of my mind when I found this amazing tea!

Are you ready for what I switch too and gave up coffee without even thinking twice...
It's Herbalife.


I wasn't really looking for a replacement. However, like I mentioned, I was considering lowering my coffee intake but when I stumbled upon this, quite on accident, all it took was one glass and I knew I had found my solution!

I personally like the Lemon flavor. The tea itself is a blend of green, black and orange pekoe teas. It does have caffeine still, but for some reason it hits me in a totally different way.

❤ I drink it cold, on ice and chug it. Unlike coffee where I usually sip it til it's cold, reheat it and sip some more. This is refreshing and crisp.

❤ The energy I get from this is almost instant, feels natural and last for hours without the jitters! I drink 1 in the morning and 1 at lunch. If we are going out and I want that extra boost I'll drink one around dinner time. But no later or all be up all night!!!

❤ No creamer! The stuff they put in creamer is so icky for you, loaded with sugar and you're looking at 35 - 70 calories per cup depending on how much creamer you like. The tea only has 5 calories per 1/2 tsp which is equivalent to an 8 ounce glass of tea.

This photo is of my 32 oz Bubba cup that I used to drink my coffee out of! Now I drink only 8 oz out of my Austin Springs bottles. It's a 16 oz bottle, but as you can see I fill it with ice first, so it's only 8 ounces of tea. =========>

So there you have it. This is the straight and honest truth. I dropped coffee because of this tea!

Homemade Italian Meatballs Tutorial


I know many of you have been waiting for this recipe and here it finally is! These are my homemade meatballs. It has taking me years to perfect these and lots of "discussion" with mine and my husbands Italian families. If any of you understand how a "discussion" in an Italian family goes, than you appreciate just how much work went into this recipe!

So with out further ado I give the yummy homemade meatballs! CLICK HERE for the printable version of the recipe. Oh and just FYI, I recommend reading this once through before you dive in trying to make them.

I use 5 lbs of ground beef because I make lots at one time and freeze them for later use! So this will give you roughly 36 meatballs, that's about 7 meatballs per pound. I am truly Italian for the mere fact that I have never actually measured out the ingredients, I just keep throwing it in the bowl til it looks right. That being said you need a BIG bowl!


Throw your ground beef and eggs in the bowl so they can slightly defrost because mixing cold, wet meat with your bear hands tends to hurt after just a few seconds. So in the meantime, dice up your onion and garlic, then throw them in a pan to saute. 

I use my handy dandy food chopper for this process, it makes my life so much easier! I also like to use my cast iron skillet and just a little cooking spray for sauteing. Sprinkle a little garlic salt and pepper in there, I love the Trador Joes grinder brand myself..... Mmmm I can smell it through memory! Is that possible?  


While the defrosting and sauteing is going on, make your bread crumbs. Yes I said MAKE, I don't use store bought bread crumbs. This is super easy to do with any blender or food processor. I just happen to use this old school Sunbeam Oskar food processor from like the 70's that my mom found at a garage sale, I LOVE this thing. You twist the lid to turn it on, oh it's awesome. In fact, quick, funny story about it.

So back in our old place I used it, washed it and had my kid put everything away. Well the next time I went to use it, the lid had "magically" disappeared. I was so bummed, but I decided to hang on to it just in case the lid showed up. A year and half later it made its return! Low and behold while I was throwing out Tupperware containers I never used, in preparation for our move, there was the lid! How glad I was that I hung onto this amazing little retro kitchen appliance! Oh and they are still making this thing and it looks exactly the same!!!

Ok back to the meaty balls. So grab your favorite bread, throw it in your blender or whatever your using until it's tiny, fluffy and and looks like... well crumbs. I just happen to like Natures Own "Honey Oat" brand bread. I have noticed if you use the grainy stuff your meatballs taste that way, but if you like that kinda thing great.


This next part is very important! No Italian dinner is complete without Parmesan cheese, but it has to be the real stuff though! We're not talking the crap in the green bottle that looks and tastes like bleached sand. No I'm talking the stuff you buy in a block and crumble yourself. Ironically I use that same little retro food processor to crumble my cheese too.

Oh and to those of you who know what a Vitamix nut I am and are asking yourself "Why not use your Vitamix for that?"

I have two answers for you.

1. I have! It turns out okay but you have go at a slower pace. The big canister is made for liquids and stuff like cheese starts to goo together at the bottom near the blade if you try to do to much at one time. That is unless you use their dry canister which I don't own.

2. I have this awesome little retro dude and he just knocks it out of the park, so I use him. (Why it became a male, I'm not sure)

Ok so back to the glorious balls of cheesy, meaty goodness. By this point your sauteing is probably done or has been and you just set it aside. So now it's time to throw it all together: the cheese, bread crumbs, spices and the sauteed stuff.

I use this cheap little handheld beater my grandma gave me because I'm still waiting for my Kitchen Aid mixer as an anniversary gift or even better for someone to give me one to review & one to giveaway to my readers. **Wink 0_- Wink** 

The only problem is after the meat starts to thicken, which it will, it gets hard to mix. At which point I have to switch over to mixing and mashing with my bear hands, which you can just start that way if you wish.


Once you have a giant blob of meat mix, it's time to make balls! Take a small handful of mix and roll it around in your hand. Make sure to mash it together well so it doesn't fall apart. They should come out being about 1 1/2 - 2 inches in diameter. Make them bigger if you want, I don't care. I've just found this size works well for kids and adults. Oh and remember the bigger you make them the less overall amount you get and the longer you need to cook them in your Crockpot.

Now what you do with them once they are rolled is up to you. See this part I've been told is un-Italian, but since I like to be on the healthier side and still eat my meat cake too, I don't care! I bake them for about 10 minutes in a preheated oven at 350 degrees. Just enough to brown the outsides and melt off some of the fatty grease. I have a trick to doing this, place a bakers rack over a baking pan, then place your balls on the bakers rack.


Why do it this way? Well, just check out the amount of grease below! The first picture is of the fat that dripped off the balls while cooking, without this simple little trick that would be in your sauce! Ugh no wonder the Italians are known for be "fat n happy"! Don't get me wrong I LOVE Italian food, but come on we are in the 21 century lets get with the program people. My great grandmother is probably cursing me from the grave right now! =)

The second is of the grease that was still dripping off the meatballs during the cooling process. Yeah gross.



Oh and speaking of the cooling processes, you'll only want to let them cool if your going to freeze them like I do. Just enough that they don't melt your freezer bags. I use my awesome Foodsaver to get the job done. Have I mentioned I love this thing. I only do about 6-7 meatballs per package because I know thats about how many my family will eat in one meal, however as my kids grow, I'm sure that will change!



I usually throw a batch straight into the Crockpot for that nights dinner, in which case they don't need to cool first. Let them cook for about 2 1/2 hours fresh (4 hours frozen), any longer and they will start to fall apart.

How to tell if someone "Liked" your Facebook page



As a blogger who does giveaways it's very important for me to know if someone "Liked" my Facebook page as this is usually a source of entry into my giveaways. Sadly people lie, they say the liked your page or shared your post just to get the entry but upon verification I find out they didn't. But for the longest time I didn't know an easy way to do this, until now. After some time of Goggling it I found out a little Facebook secret! Why can't Facebook just make it easy! Well they don't, so I'm sharing!

Below is an actual snapshot of my Facebook page.

1. Go to "Settings"
2. Go to "Banned Users" (The red arrow on the left)
3. Go to pull down menu and select "People Who Liked This" (The red arrow on the right)

This will bring up all the people that have liked your page in order of when they liked it. This is a very handy tool in verifying entries. If need be, you can ask people if they know how long they have been following you and go to that time frame. If they run and like you right then, you'll be able to see!

5 Fun Facts About Showering With A Toddler

Oh toddlers... the fun and unexpected things you can only know if you have or have had one. I have a 17 month old little girl who is just a joy and even though she's my third, I still learn so much from her! One of her favorite things to do is shower! She hates taking a bath! But the shower... oh how she loves it! She tries to get in fully dressed even if the water isn't on. We have a walk in shower with sliding doors and she has just about mastered getting the doors open. Anyway every time my hubby or I are getting in, she runs to the door and tries to get in with us. Of course she discovered "it" so she can no longer shower with my hubby.

But with me, my kids seem to have no problem when I'm naked. My 5 year daughter still showers with me and 12 year son sees no reason why he can't talk to me face to face while I'm sitting on the toilet. I guess my kids being comfortable with nakedness is a good thing, a little weird for mom, but oh well.

Ok, I got way off track. So this morning I'm about to jump in the shower, the baby hears the shower turn on and comes running with big smiles. I didn't have the heart to throw her in her playpen while I showered alone, so I undress her and let her in with me. And this is the conclusion I have come to:

Buy it on Amazon now!1. I need to shave with those colored bath soaps. While I was shaving she was having a blast grabbing the clean shaving cream off my legs and rubbing it on herself and the walls. But white is not near as fun as colors would be!


2. Everything is a toy. Even though she showers more than she bathes, we don't keep toys in the shower just for the sake of room, just a cup. So she tries to play with whatever she can reach, bottles of shampoo, lofas and bars of soap!

3. All I can say is waterfalls are not always a great places to play. She thinks the water that runs down my legs is just for her so she's constantly sticking her little figures up my thighs and in my crotch.  She especially likes to put the cup up there. I'm desperately trying to break her of playing in this little, uncomfortable (for me) waterfall!

4. Expect them to pick up weird noises. As I rinse the soap off my face, I take a deep breath and then stick my face in the water to rinse and release the air. Well this results in a funny spitting noise that I never realized was produced until I heard her mimicking the noise. Now washing my face will always make me smile as I think about my little parrot.

5. Wash them last! As I watched her play in the water and suds, it dawned on me how dirty that water is. But she's having so much fun and at least she doesn't try to drink it. So my theory is wash them last so they are at least clean when they get out.

It's such a special feeling when you wrap them in a towel and get a sweet little clean snuggle from them! Remember to stay safe in the shower but make it fun, they are only toddlers once!

Wordless Wednesday: Bass Lake

This summer we took our yearly trip up to Bass Lake, which is just below Yosemite. We had a blast. Well at least after we got there...
